Check the form being used by this transition. Make sure that important fields are not read-only. For example, if you plan to save the subject line from the email into the Title field of the SBM item, make sure that Title is not read-only.
If some fields are mapped but they are not copied to the created SBM item (i.e. the submit line is not copied into the Title field), check the form being used by the Email Submit transition. A common reason for this problem is that the field is marked as read-only on the submit form.
